1.5 lbs butternut squash, cubed, roasted in olive oil, s&p until caramelized; 1 T olive oil, 1 red onion & 1 leek, sliced; 2 t minced garlic, 2 t thyme, 1/2 c parm, 3 eggs, 1 c milk, 1/2 c cooked rainbow quinoa
