red bean paella

2 c cooked red beans, 1.5 c uncooked white rice, 2 c water, 1 package tofurkey italian sausage sliced, pinch saffron

stir in parchment-lined cast-iron pan; place in cold oven set to 450 F, 1 hour; top with basil+red pepper flakes

  1. I’m not saying I’m triggered by the use of the term ‘paella’ here, but I’m not not triggered.

    Having just returned from Valencia Spain (the origination point of paella) the Michelin trained/Valencia born chef that trained us indicated that paella is rice, chicken, rabbit, butter beans, flat green beans. Anything else is just “arroz con cosas” (translation – “rice with things”). πŸ™‚
